Can this pistachio butter salad dressing be used on any salad?
Absolutely! It was especially delicious on this harvest kale salad, but would also be great with a kale caesar salad or spinach salad.
Can I swap the delicata squash?
Definitely - you could swap for roasted butternut squash, or acorn squash. Or, if squash isn’t your thing – feel free to omit. Avocado would be a great addition as well!
Can I make the dressing in advance?
Preparing a large batch of this dressing in advance is a great idea to save time throughout the week. Meal prep ahead of time, and store in an airtight container in the fridge for up to 5 days.
Do I need to "massage" the kale?
Yes!!! If you are an avid kale fan, you will know this secret tip is essential for a tender, sweet, and delicious kale salad. And, if you're not a fan of kale, you just might enjoy it after trying this hack. To massage the kale: place washed and shredded kale in a large bowl, and massage for 1-2 minutes with a drizzle of olive oil.
